Home-made Beef and Mushroom Party Pies

They’re 100% HFI safe.Made with tender beef, hearty mushrooms, and a wholesome homemade flavour, these little pies are perfect for birthday parties, school lunches, or stocking the freezer for busy weeknights. They’re a hit with kids and grown-ups alike!They’re warm, filling, and feel like a little hug in every bite—safe, simple, and full of love.
Ingredients
- Home-made pastry
- 250 - 500 grams Beef Mince (depending on how many pies you want to make)
- 1 - 2 small button mushrooms chopped finely (these are optional depending on your personal diet restrictions)
- Home-made beef stock
- Pinch of corn flour
- Salt and pepper to taste
- Very small pinch of dried mixed herbs (optional)
- 1 tbsp olive oil
Home-made Pastry (Thermomix)
- 200 grams butter (frozen)
- 200 grams plainflour
- 90 grams chilled water
- 1/2 tsp salt
Instructions
- Cook beef mince in the fry pan with some olive oil and mushrooms.
- Add home-made beef stock, salt, pepper and dried mixed herbs to the pan – the amount of beef stock will depend on how much mince you are using. I like to use enough that the mince is in liquid but not drowning in it.
- Then simmer the mince with home-made beef stock and a very small amount of corn flour to thicken (if you don’t have any home-made beef stock you can use a little water).
- Once the pie filling has thickened to a nice gravy texture, pop it in the pie maker for 8 minutes!
Home-made Beef Stock
- It’s very simple and extremely healthy! When you make roast beef, collect all the meat juice and put it in Tupperware or sandwich bags then freeze it! It contains vitamins, minerals, marrow and a little fat. You can remove the fat once the liquid has cooled if you prefer, but I leave it in for a little extra flavour!
Home-made pastry
- Place plain flour, butter and salt into mixing bowl and mix 10 seconds/speed 6 – or until mixture has consistency of breadcrumbs.
- Add water and knead 20 seconds.
- Transfer dough onto a floured work surface then knead the dough into a tight ball. Wrap the pastry in plastic wrap and put in the fridge to chill for 30min before using.
- Using a rolling pin, roll out the pastry on a floured work surface to approximately 2mm thickness. Using a pie cutter or egg rings, cut the pastry to the desired size and place it in the pie maker ready for your pie filling.
Notes
I made a batch of 16 pies and popped them in sandwich bags and placed them in the freezer, noting the date they were baked. They are very handy to have in the freezer, ready for birthday parties or events!
