Ingredients
2cupsplain flour
2eggs
4tbspwater
1tspsalt
1tbspolive oil
Instructions
Traditional Method
In a bowl or food processor, mix flour, eggs, salt, and half the water.
Slowly add the remaining water until the dough forms a crumb-like consistency.
Knead the dough for 4 minutes, then wrap and rest the dough in the fridge for at least 15 minutes.
Divide dough into 4 portions and roll each portion out thinly. If the dough is sticky, dust with a little extra flour.
Cut into your desired shape — strips for fettuccine or rounds/squares for ravioli.
Place the pasta on a rack and allow it to dry for 1 hour before cooking.
Thermomix Method
Add flour, eggs, salt, and half the water to the bowl. Turbo or pulse while gradually adding the rest of the water until it’s a crumb-like consistency.
Knead the dough for 4 minutes. Wrap and rest the dough in the fridge for at least 15 minutes.
Divide dough into 4 portions, roll out thinly, and dust with flour if needed. Cut into your preferred shape.
Notes
Cook fresh pasta in salted boiling water for about 3 minutes or to taste. It can also be dried further and stored for later use.
