Fresh Homemade Pasta

There's nothing quite like the taste and texture of freshly made pasta. With just a few simple pantry staples, you can create smooth, tender pasta perfect for fettuccine, ravioli, or any shape you love. Whether you're mixing by hand or using your Thermomix, this HFI-friendly recipe is a must-have for pasta lovers.

Ingredients

  • 2 cups plain flour
  • 2 eggs
  • 4 tbsp water
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions 

Traditional Method

  • In a bowl or food processor, mix flour, eggs, salt, and half the water.
  • Slowly add the remaining water until the dough forms a crumb-like consistency.
  • Knead the dough for 4 minutes, then wrap and rest the dough in the fridge for at least 15 minutes.
  • Divide dough into 4 portions and roll each portion out thinly. If the dough is sticky, dust with a little extra flour.
  • Cut into your desired shape — strips for fettuccine or rounds/squares for ravioli.
  • Place the pasta on a rack and allow it to dry for 1 hour before cooking.

Thermomix Method

  • Add flour, eggs, salt, and half the water to the bowl. Turbo or pulse while gradually adding the rest of the water until it’s a crumb-like consistency.
  • Knead the dough for 4 minutes. Wrap and rest the dough in the fridge for at least 15 minutes.
  • Divide dough into 4 portions, roll out thinly, and dust with flour if needed. Cut into your preferred shape.

Notes

Cook fresh pasta in salted boiling water for about 3 minutes or to taste. It can also be dried further and stored for later use.
